The gem among different sorts of gingerbread is the "ELisen" gingerbread. The name goes back to the 15th century, to Elise, wife of Earl Friedrich. She was progenitrix of the German Emperor of Hohenzollern. The exceptional feature of this ‘royal’ Nuremberg gingerbread are the ingredients: selected spices, a minimum of 25% almonds and hazelnuts, with no more than 10% flour.
