Since the Middle Age, Nuremberg is the capital of
gingerbread production. The most important trade
routes led through Nuremberg and brought exotic
spices to the area, while the surrounding forests
provided plenty of honey. In the 17th century,
Nuremberg’s gingerbread manufacturers agreed to
purity regulations for their products and since
then a very high quality standard applies to
Nuremberg gingerbread.

The gem among different sorts of gingerbread is
the "ELisen" gingerbread. The name goes back
to the 15th century, to Elise, wife of Earl Friedrich.
She was progenitrix of the German Emperor of
Hohenzollern. The exceptional feature of this ‘royal’
Nuremberg gingerbread are the ingredients:
selected spices, a minimum of 25% almonds and
hazelnuts, with no more than 10% flour.
