Where does the term "Elisen gingerbread" come from?

According to legend, in 1720, the daughter of a Nuremberg gingerbread baker fell mortally ill. The desperate father baked a special gingerbread for her – made only from pure hazelnuts, bee honey, and the finest spices.

After consuming it, the child recovered. The daughter's name was Elisabeth, and the gingerbread became world-famous under the name "Elisenlebkuchen" (Elisabeth's Gingerbread).

We have committed ourselves to this standard of quality and now mark our "Elisen" gingerbread with the Elisabeth icon.
